Violetto d'Albenga is a classic Italian heirloom asparagus from the coastal region around Albenga in Liguria, prized for its deep violet-purple spears and gourmet reputation. It is the traditional purple asparagus of Italian cuisine and the parent of newer purple selections. The spears are thick, tender, and remarkably sweet, with a higher sugar content than green types and a low-fiber texture that makes peeling largely unnecessary and allows raw use. Being an open-pollinated heirloom with both male and female plants, it yields less heavily than all-male hybrids and the purple color fades toward green during cooking.
