    Copenhagen Market is an heirloom early round cabbage developed in Denmark and introduced to American gardeners in 1909. It became one of the most popular early cabbages of the twentieth century thanks to its uniform, ball-shaped heads and short internal core. Heads average three to four pounds and sit on a compact plant with few outer leaves, allowing close spacing. The variety matures dependably in early to midsummer and holds well in the field before splitting. Its solid, fine-grained heads are excellent for fresh eating, slaw, and kraut. Copenhagen Market remains a favorite open-pollinated choice for gardeners who want a reliable, space-efficient main-season cabbage with proven performance across many regions.
