    Poblano is a large, mild chili from the state of Puebla in Mexico, the classic pepper for chiles rellenos and for the sauce mole poblano. The heart-shaped pods grow four to five inches long with thick walls and a deep green color that ripens to dark red-brown. Heat is gentle, generally 1,000 to 2,000 Scoville units, with a rich, earthy flavor that deepens when the pods are roasted and peeled. When ripened and dried, the poblano becomes the wrinkled ancho chili central to Mexican cooking. The productive plants set pods over a long season, and the poblano is prized for stuffing, roasting and adding mild, savory chili flavor.
