Serrano Tampiqueno is a traditional open-pollinated strain of the serrano chili from the Tampico region of northeastern Mexico. Like other serranos it bears slim, meaty pods one to two inches long that are usually used green, ripening through orange to red, with a hot, bright flavor around 10,000 to 25,000 Scoville units. This particular strain is prized by seed savers for its heavy production of uniform pods and its reliability over a long season. The tall, vigorous plants set fruit in abundance and thrive in warm conditions. It is a favorite for fresh salsas and pico de gallo, where its crisp texture and clean heat come through best.
