    Ataulfo, also marketed as Honey or Champagne mango, is a Mexican cultivar developed in the Soconusco region of Chiapas and named after grower Ataulfo Morales Gordillo. It rose to international prominence in the late 20th century and is now a major export from Mexico to the United States and Canada. Ataulfo is celebrated for its small, kidney-shaped fruit with buttery, fiberless flesh and a rich, sweet flavor that distinguishes it from larger Florida types. It is polyembryonic, so seedlings can grow relatively true to type, though commercial trees are grafted. The thin seed yields a high flesh-to-seed ratio, making it excellent for fresh eating, purees, and desserts.
