Kesar is a renowned Indian mango cultivar from Gujarat, particularly the Junagadh and Girnar hill regions, first cultivated in the early 20th century and named for its saffron-colored pulp (kesar means saffron in Hindi). It holds a Geographical Indication tag as Gir Kesar and is second only to Alphonso in prestige within India. Kesar is highly valued for making Aamras and mango pulp, and it is a significant export from western India. It is monoembryonic and propagated by grafting. The fruit ripens in early summer and is known for its distinctive aroma and bright orange flesh that retains color and flavor well in processed products.
