    Flavor Profile

    Rich, smooth, meaty and fruity table olive with a distinctive sought-after flavor; low oil content (around 6%) makes it a table rather than oil olive, though it yields a high-polyphenol oil.

    Visual Characteristics

    Large, dark purple, almond-shaped plump fruit; the tree is distinctive for large leaves that grow to about twice the size of other olive varieties.

    Growing Tips

    Cannot be harvested green and must be hand-picked when fully ripe to avoid bruising; needs a warm, frost-free climate and is usually cured in wine vinegar or brine.
