The most widely grown oil olive in the world, centered on the Spanish province of Jaen. It is valued for high, reliable oil yields and oil that is exceptionally stable and high in oleic acid.
Flavor Profile
Robust, peppery oil with a distinct tomato-leaf note and rich dark undertones; very high in polyphenols and oleic acid, giving excellent stability, though it can turn 'catty' when overripe.
Visual Characteristics
Medium-vigor tree with a spreading growth habit; the elongated fruit is nipple-tipped and ripens to black.

Early ripening with very low fruit attachment force, making it easy to harvest mechanically; adaptable and high-yielding across a range of conditions.
