    Charlotte

    Potato(Solanum tuberosum)

    Early season

Charlotte is a French-bred second-early salad potato introduced in the early 1980s and now one of the most popular waxy potatoes in Europe. It produces medium, elongated pear-shaped tubers with pale yellow skin and firm, waxy yellow flesh that holds its shape beautifully after boiling. This makes it a premier choice for salads, boiling whole, and steaming, and it can also be roasted. Charlotte crops reliably and can be harvested young as a new potato or left to bulk up. The tubers resist disintegration and discoloration when cooked, and the plants offer reasonable disease tolerance. Its consistent quality and versatility have made it a staple of both home gardens and gourmet markets.

    Flavor Profile

Firm, waxy, faintly buttery yellow flesh that stays intact when boiled; excellent cold in salads.

    Visual Characteristics

Medium elongated pear-shaped tubers with pale yellow skin and waxy yellow flesh.

    Growing Tips

Harvest young as a new potato or let bulk up; the waxy flesh is ideal for boiling and salads rather than mashing.
