Yukon Gold is a yellow-fleshed potato bred in Canada at the University of Guelph and released in 1980, the first North American cultivar marketed heavily on flesh color. A cross involving a North American white and a wild Peruvian yellow-fleshed line, it became the benchmark all-purpose potato in North America. Medium, slightly flattened oval tubers have thin yellow-tan skin with characteristic pink eyes and moist, buttery yellow flesh. Its medium-starch, waxy-to-mealy balance makes it exceptional for mashing, roasting, pan-frying, and boiling without falling apart. Yukon Gold matures mid-season and stores reasonably well. It remains one of the most recognized table potatoes among home gardeners and chefs, prized for the naturally rich, buttery quality of the cooked flesh.
