Bull's Blood
beet(Beta vulgaris)
A heirloom grown as much for its ornamental deep purple-red foliage as for its roots, derived from the old French 'Crapaudine' line and dating to roughly the mid-19th century. Grown widely for baby leaves and microgreens as well as roots.
Flavor Profile
Sweet, slightly earthy roots with no bitterness when harvested young; the dark leaves are mild and tender.
Visual Characteristics
Striking dark purplish-red leaves in basal clumps 12-18 inches tall; red roots that, when sliced, show bright red flesh with lighter pink rings.
Growing Tips
Grown widely for baby leaves and microgreens (harvestable around 30 days), which make a colorful salad and Swiss chard substitute. Prefers cool temperatures (55-75 F), consistent moisture, and rich, well-drained soil.
