Chioggia

    beet(Beta vulgaris)

    60 days to maturity

An eye-catching Italian heirloom named for a fishing town near Venice, also sold as 'Candystripe' or 'Bull's Eye.' Cutting the root open reveals distinctive concentric rings of pink and white.

    Flavor Profile

Delicate and notably sweet, milder and less earthy than most red beets.

    Visual Characteristics

Round to slightly flattened roots about 2-3 inches across with red-and-white banded skin; sliced cross-section shows alternating pink/red and white concentric rings that fade when cooked.

    Growing Tips

Best eaten raw or lightly cooked to preserve the striped pattern, which bleeds and fades with prolonged cooking. Greens are edible from about 50 days.
